In 1942 his maternal grandfather Giuseppe Cimino, began his work as a "cropping" with his hands knotted the first mozzarella, producing with one of the most valuable milks, that of buffalo of the Plain of Sele. Driven by the desire to learn cheese and to follow in the footsteps of his father-in-law, Gennaro also began, as a young man, to engage in the family activity that, in the 1980s, took over to renew it according to the new logic of the market
